Carrot Cake Recipe
Makes one large traybake - about 24 pieces! Taken on 11th May 2011 whilst I was on a weeks vacation staying in an apartment in St Ives. It was a beautiful day with blue skies and turquoise seas as I walked along the sea wall into the town. Beyond the harbour in the distance on the right you can see Godrevy lighthouse and the hills stretching past the towans towards St Agnes.
